Plum Sauced Chicken (Low Cal)

2-1/2 to 3 lb. chicken, cut up (I used just breasts, 2 lbs...)
1/2 t salt
1/4 tsp pepper
1/3 c plum preserves
1/4 c finely chopped onioin
2 T frozen orange juice concentrate, thrawed
1 T soy sauce
1 t prepared mustard
1/2 t ground ginger
1/4 c dry white wine
1 T cornstarch
1 T cold water
1/2 t instant chicken bouillon granules

Remove skin from the chicken and season with salt and pepper.
In a large skillet combine; preserves, onion, oj, soy sauce, mustard, and ginger.  Simmer uncovered for 10 minutes.  Add wine. Add chicken pieces and spoon the sauce over them.  Cover and simmer for 40 - 45 minutes, or till chicken is tender.  Baste occassionally with plum mixture. Remove chicken to warm platter and keep warm.
Skim excess fat from pan juices.  Measure 1 c. juices and return to skillet.  Stir
together cornstarch, cold water, and bouillon granules.  Add to pan juices.  Cook and stir till thickened and bubbly.  Spoon some sauce over chicken on serving platter.
Pass the rest.  Makes 6 servings (mine made 5) 236 Calories
